Exudates are complex mixtures of organic compounds oozed by plants, often, but not always as a result of injury. These products are rich in carbon and hydrogen atoms and are also commonly called “sap” although the word “sap” is used to describe any fluid that travels inside plants. Only little research is currently underway on gums from African plants, yet Africa imports a lot of gums for pharmaceutical and food industries. This books presents exudate gum from Daniella oliverri which has been analyzed for their physiochemical properties, chemical constituents (using GC-MS). Their application as corrosion inhibitor has been investigated and reported. Furthermore, it gives an overview of the main application fields of the plant gums, both in food, polymer and pharmaceutics.
